We snagged a great deal on a cabin on gatlinburg for ours in November
We did an all inclusive, was easy, probably wouldn't do one again for the cost
We're looking at Mallorca, one of the Balearic Islands off the coast of Spain. We went to Barcelona last year and fell in love with it so we were hoping to spend some time on the island and then go back to Barcelona for a few days before we head back home.
I too enjoyed barcelona stayed on las ramblas in a hostel while I was in college

If I were in your shoes and limiting my options to Europe I'd shoot for Malta. If it all goes south with my wife or gf (or even both of them!) there are plenty of crazy-hot Maltese girls ready to fill in.
