Audio recording questions

Anyone have experience with recording gear (wireless + wired microphones, audio software, ect)?

My SIL has started a small Christian ministry and wants to record her weekly sermons and then distribute to members on cassette or CD. I think the best way to do this would be a microphone (wireless would be nice) hooked into a USB interface attached to a laptop. This is more complex than a simple cassette recorder, but there is no worry about running out of space + flipping the cassette. She could then edit and rip the audio file to CD.

I have no experience with mics or editing software, but have enough computer knowledge to help her until she feels comfortable with the setup.

Initial research reveals THIS package that might work, although I don't know if the items are decent quality. She could spend more on better equipment, but would like to keep in under $1000.

I used to do alot of recording. I used acid pro alot. I was able to be a one man band so to speak. I believe the other program I used was musicmatch or musicmaker...well I forget. It would not be hard to record a sermon. I wouldn't know how to get it wireless though.

I think you can get a decent USB soundcard if its a laptop that takes 1/4" jacks. Then you can use a decent quality professional wireless mic. M-Audio makes pretty good stuff I think but I don't have any experience with it.

One option would to get a small PA system like this:

It has both the 1/4" jacks and the normal mic jacks, so you could plug a good mic into it and then record on the computer. Not sure what software would be handy. If it was on a mac you could use garageband which comes with any new mac.
