Just do a restore through itunes, it pretty much erases everything.

Make sure you take the extra few minutes to upgrade it to 2.1 and jailbreak and unlock it, it will bring 50-100+ more dollars if you do

A friend of mine told me indeed, iTunes doesn't format it well with the normal formating. Here's something taken from his blog:
Restore the iPhone from within iTunes.
On the “Info” tab, un-check all options so you don’t synchronize calendars, email, bookmarks, and contacts.
On the Photos, Podcasts, and Video tabs, uncheck “Sync …”.
Create 3 big playlists at large as the storage capacity of your iPhone.
On the Music tab, select the first of your 3 playlists to sync. Make sure the storage bar at the bottom looks full after syncing.
Sync your iPhone, change to the next playlist, sync again, and repeat one last time.

I thought the same thing, but I've read now that that's not at all true. That was what prompted the question...
True, but you have to go through some effort to get anything off after it is restored. If it has confidential info then what Moro suggests will work, I have heard. But I would not worry to much unless you had something on there you are really concerned about, like police using forensic software concerned about.

Honestly don't know as I haven't really looked at what typical prices are. I'm sure we can come to a reasonable agreement, though.
I sold a 1g 8gb Jailbreaked and unlocked that was a little beat up for $280 last week, a couple months ago I sold one in great condition for $350.
