Thanks guys! Really it's not so bad being 21...with 25 years of experience.
As a matter of fact, I am doin' some smokin' today. Last night, I rubbed down almost 7 pounds of pork loin with maple and brown sugar cure. They'll be sittin' in the fridge for the next three weeks, studyin' to be ham. After that, I tossed a couple of turkey breasts in a bucket o' brine for a sleepover with the loin. They and the smoker are both comin' up to temp as I type.
Later this evening, The Wife® is takin' me out for sushi. Before that, I plan on enjoying a stick and a snort. I think I've got my choices narrowed down to a Serie D No. 4 and Elijah Craig 18 year old single barrel...or...an Añejo and Glenlivet Nàdurra. Whattayathink?
