Odorless glues

Revamping my wineador and want to put some Spanish cedar sheets on the inside.

What's the best way to attach them?

Well I think your title of this thread is spot on. Some sort of odorless glue. But I would still be weary of how truly odorless it is. You could maybe get some very short stainless steel screws and drill into sidewall, but then you would need to plug the holes of you ever took them out. One idea that just popped in my head is that you could take the sheets and some small pieces of Spanish cedar and make a sleeve that fits into the wineador.

There's somewhere I've seen that has attachable sheets. I can't remember, but I think I've seen sticky cedar sheets

I *believe* that you can use pectin. Not having done it myself, I can't say for sure. However, I am reasonably confident that you want to use as thin and lightweight sheets as possible.
