Gentlemen- I have been pretty absent as of late and I apologize. Things have been quite hectic in my world lately. Anywho I just had a 5 hour "chopped" style interview for a prestigious country club here in MA. I cooked my ass off.
I prepared 1st course: Smoked duck breast, berry chevre, micro arugula, duck confit crepes, toasted hazelnut vinaigrette.
2nd Course: Portuguese style pork and littleneck clams, crispy fingerlings, hot vinegar peppers.
3rd Course: Pan roasted Diver scallops, butternut risotto, crispy pancetta, dizzle of cinnamon honey.
Finale: warm chocolate coconut bread pudding, fresh cream and berries.
