Deftones cover of "Simple Man". I really like the Skynyrd version but the Deftones really seem to add a humbleness to the song that gives it more depth for me.
Close second, Johnny Cash's cover of "Rusty Cage". I like the song but I've never been a huge fan of the way Chris Cornell's voice sounds, so the Johnny Cash version is a win for me.

I came really close to picking this one as my choice, but the Otis version is excellent in own right - the Crowes remake blew the cobwebs off the song and was a great song that helped put them on the map.I'm sure it's already in the thread, but it takes balls of steel to re-do Otis Redding's 'Hard to handle", but the black Crowes sure nailed it!
