Today is ny sisters 30th birthday, my sis in laws 30th bithdya and my Grandmotghers 94th birthday. I cooked a 75 lb pig that tasted incredible. 20 lbs of dilled red potatoted 24 ears of corn on the cob and drank a hal of a fithth og Appleton Eststates V/X Rum. Started the day with a Ashton VSG, Followed by a CAO Brazillia Lambabda and a mojito and finishedthe evening with a Rocky Patel Old World ZReserve and shot gunned a beer for the first time in 20 years. All followed by a ride home from my non-drinking father and a visit to BOTL.org. What a day. Good night!

Wow. SOunds like a super time and spread. Haven't been to a pig roast since Micgigan. A true art.

Good Morning- That was my first whole pig that I have cooked on my own. Started cooking at 10:30 and finished it at 6:00. There were ~50 people at the party. The night ended with me and 3 of my brothers, one of my sisters and my brother in law smoking cigars and trying to finish the remainder of the alcohol. Well time to go clean up.

wow, my mouth is watering. please post pictures if you have them and tell us how you did it.

I've wanted to cook a pig for a while, but haven't had the courage to do it. maybe I'll try to do one before the year is over.

Had barbeque again today for lunch and supper. Going on vacation for the week. My Mom is going to freeze a couple quart size bags of chopped barbeque for me to pickup on Friday.

Man now I want some BBQ! Too bad the place near work closed, they had a great pulled pork sandwhich on texas toast

Here's a few pictures. The traditional way to serve "barbecue" at a "pig pick'n" in Eastern NC is to allow the guests to pull what meat they want from the pig or to have it chopped and seasoned. We chopped and seasoned.

The place we bought the pig from had a great pamphlet with instructions for cooking a whole pig. I'll have to find it and send a link. Overall cooking time for this one was about 7 hours.
