Put down 5 gallons of Irish Red Ale last night (homebrew)..

The brown ale that I did a few months back turned out much better than expected (was my first attempt at homebrewing).. so Im really looking forward to this one..

will keep everyone posted on how it turns out (should be ready to transfer and bottle about the time I get home from this trip!)..

Very nice. I need to get a batch brewed. Not sure what I'm going to do, most likely a Stout being that it's winter and I love Stouts.

Now that it's late January, my next brew will be an ESB. I was going to do an espresso stout or porter but, by the time it's ready, it'll be well into late March.

I am also contemplating a Sake batch...

Do you follow a recipe, use a kit, make from concentrate? I first started brewing back in '91 but then took about ten years off and just got back into it a year ago. I'm primarily doing the kits but am thinking about going all in and doing everything from scratch.

Congrats. You'll find that homebrewing, much like cigars can get pretty expensive very quickly.

I hope your second batch turns out better than mine. I brewed a decent first batch of brown ale. Then I didn't clean the bottling wand well enough on my second and brewed 5 gallons worth of gushing ESB. At least I haven't done that again. Live and learn, I guess.

I do partial mash...just don't have the time to do full mash runs.

You're much more patient than I am, I only let my Stouts sit in the secondary for 3-4 weeks and I drink them year round so not a big deal. I've been brewing since '94 with a couple year hiatus.

Welcome to the next slippery slope. Just remember the most important lesson you can learn. RDWHAHB (Relax, Don't Worry, Have A Home Brew). Beer wants to be beer. Everything before the Hot side needs to be clean. EVERY thing on the cold side needs to be sanitary. Keep it simple until you have more confidence.

Also, keep a journal. I get accused (complimented?) of being a bit anal retentive when it comes to keeping logs. That way, even mistakes become learning opportunities. One of my first batches ever was horrible. Tasted really "green" and hard. So I put it in the closet and forgot about it. Did a few more batches that turned out well, and then (and I have no idea how this happened) I ran out of beer to drink! So I spotted this forgotten batch (it had been about 6 months) and wondered to myself if it was really that bad. So I tried one and it ended up being really good. So, I knew I could make that again but it definitely needed a few months of bottle-aging.

I am slowly buying an all grain set up. Not sure if it will be ready before Spring, but I plan to make a Barley Wine as a first batch.
