Big congrats man. I proposed to my fiance at a nice seafood restaurant, and I gave the chef the ring before the meal. I asked him to bring it out on a scallop shell, or something pretty, and left it up to him. Instead he brought it out on a live crab, tucked away on one of the legs, and we had the whole dining room's attention. It was pretty cool. Don't know if that helps, but anyway good luck to you.

If you do have someone that can sneak along and take pictures, do it! I did and it turned or great. Many couples do a scheduled engagement photo shoot later, but you can never recapture that initial response and all of the emotion. Even if they showed up after dinner and brought you the ring it would be worth it. She'll know what's up as soon as you make your move anyway, but that will likely be the most emotional point in her life outside of the birth of your child.

Just don't do it on a day she works. I proposed right before my wife had to leave for a 12 hour shift at the hospital. 10 years later and I still hear about it.
