I tried that once. Very labor intensive, but actually turned out well

I have a friend who studied it abroad and I fell in love with Sake so I thought I may as well try it.

Sake is next I got the yeast i just haven't done it yet. I also make mead

That's one I've wanted to make but never pulled the trigger on. Honey is getting expensive.

Edit: we have a fantastic local meadery who sells 750 ml bottles for $20 plus, honey is cheaper than that

It's really good and at 17% abv it's smooth.
