So, my brothers... Who doesn't love a great piece of Prime Rib? Unless you're munching on tofu and lettuce, sparing even the egg, you vegans.... We all do... Well, in discussion with some friends recently the topic odd cooking Prime Rib came up and I was intrigued to hear so many different ways of guys cooking it..

I thought I'd share an easy yet amazing way of cooking Prime Rib... Here it goes...

I'll use the example of a five pound boneless prime rib.
So, for every pound cooking time is 22 minutes following these SPECIFIC instructions.

Season to your liking. Put on roasting rack so not to sit in its own fat while cooking.

pre heat the oven at 500 degrees..

Now, every pound is 22 minutes, so 5x22= 110

cook at 500 degrees for half of 110 minutes or 55 minutes then SHUT THE OVEN OFF....
DO NOTV OPEN THE DOOR, even to peak, you MUST LEAVE OVEN DOOR SHUT.
let the roast cook with the OVEN OFF for another 55 minutes. Total time in the oven 110 minutes for a five lb roast.

Take the roast out of the oven and sit on a cutting board for another 10 to 15 minutes before slicing.

if you prefer a more medium temp, use 23/24 minutes per pound.
It comes out perfect every time.
Remember, NEVER OPEN THE OVEN...

Actually, I'd be interested seeing this too.
I do most of my cooking on a smoker or hard wood charcoal grill.

But how would you do a prime rib like that?
Rub the prime rib with whatever spice you like put in the refrigerate on a rack set over a baking sheet (uncovered) and let marinate for at least 4 hours and up to 8 hours.



Prepare your smoker Remove the prime rib from the refrigerator 30 minutes before cooking and let sit at room temperature. Sprinkle well with salt and put the*prime rib, fat side up, on the grill grate. Maintaining a temperature of about 250 degrees F cook until an instant read thermometer inserted in the center reads 130 degrees F between 3 1/2 to 4 hours. During the last hour of cooking at about 110 degrees F begin brushing with some red wine Remove the prime rib from the grill brush with more of the red wine and let rest loosely covered with foil for 20 minutes before slicing.

I'm heavily into cooking but only white meat & seafood.
I get a red meat craving maybe every 3 months, and actually follow through with a steak or burger maybe twice a year.

You use a traditional barrel smoker or do you have the box type that you can control a little better?

That is next on the list to go into the Green Egg, I can't wait to try it. Picked up a wireless digital thermometer that works awesome, I have the Maverick ET-732. Nizzle what kind do you use?
