For aging, I go with my B&M's recommendation of most any brews with a ABV over 10%. I have some 2011-14 Stone Russian Imperial, 2010 DFH 120 Minute, and 2013 Founders Imperial Stout. Drank one of each over Xmas vacation, all outstanding.

Longest mine age is barely enough time to get them cold. I tried to age some 120 minute once and think it made it a few weeks. The higher abv beers will stand up a lot longer, but they definitely change over time. What you like about a fresh beer you may not like about an aged beer and vice versa.

Dude I'm going to try this! Need to pick up a few bottles . Stupid question but can you age beer in a can? Or would it pick up metal taste?

I never knew you could age beer, thought it got bad after a certain amount of time. I'm guessing as long as you freeze it your fine?

I keep a small adult beverage fridge in my kitchen that I store and age beer in. I have a beers 1-6 years old in it. I keep the aging generally to beers with 10% abv or higher as a rule of thumb. Imperial stouts, barley wines and belgian quads most of the time can keep well.
