OK, so for my next trick.

I am looking into starting the "smoking" type of cooking. But I have absolutely no clue to what smoker I should get.

I am told an electric element that has temperature adjustment. I am also told that I want a wet & dry model. After that, I am lost.

Can anyone help a brotha out? Gale?

I started wiht a cheap electric, it was barely ok. then I went up to a weber smokey mountain. I used it for a few years with awesome results. My ribs and pulled pork were as good as it gets.

I put my weber into retirement, and will be getting La Caja China real soon. much quicker cook time, and reviews say it is awesome.

For smoking large birds you will definitely want a wet smoker. They simply consist of a pan of water sitting above the charcoal. As the water vaporizes it keeps the turkey moist and also automatically regulates the heat. Awesome concept. Weber is always a good choice.
