With 4 kids, a wife that works evenings and very little time after softball, soccer and other afterschool activities I'm always looking for quick and easy dinners. He is one of mine, please share some of yours.

Sloppy Joe's:

1# ground beef
1 bottle Heinz Chili sauce (found near the ketchup)

Brown ground beef
Drain fat
Add Chili sauce
fill bottle 1/4 full of water, rinse and dump water in the mix and stir for a minute or two.

Bam Sloppy Joes in under 15 minutes.
Serve on buns with chips, my kids love em.

We do a lot of pastas and salad's because of my vegetarian wife & 7 year old.
Italian dressing marinated chicken in crushed up ritz crackers makes for good and quick Chicken/eggplant parm... Another fav is salmon and ceaser salad: hard to mess up too.

Bertolli's, just cut open the bag and cook in a skillet (you may have to add water, don't remember). It's super easy to make and doesn't take too long at all!
I second the Bertolli's. Little on the expensive side but you can find them on sale often. Or buy the big bags at Sam's. Most frozen bag meals are flat out gross but Bertolli's some how mastered them. No water needed on the one's I've tried.

Here's a recipe for very easy (and very good) french onion soup;

Saute some yellow onions in butter until translucent (15-20 mins)
Add a couple cans of beef broth
a few shakes of Worsteshire sauce
1/4 cup of cooking Sherry
Salt and Pepper to taste

Bring to a boil then reduce heat and simmer for 10 mins.
Ladle into bowls. Add your favorite croutons then top with Provolone or Swiss
Stick in the oven under the broiler until cheese is cooked to your liking.
I like mine with the cheese a little burnt.

Throw together some grilled cheese samiches and you have a quick easy meal.

Get a crock pot and damn life gets easy! Love beef stew in the winter and the kids love it! Just ladel on top of some egg noodles! Easy to make chicken noodle soup from scratch. I've got some stock being made for some beef and vegetable soup right now!

Crock pots are great, I cook in one all year round....pot roast, pork loin, chicken, chops, you name it and you can probably cook it in a crock pot!


"Cook some linguini, add sliced garlic, chopped parsley and olive oil."

....with that combination you don't need anything else in my opinion! :clap:

I may not know much about cigars yet but this is a topic I'm a master in!!!

Made this one up tonight and it turned out great:

Get a casserole dish and preheat the over to 350.
Place however many skinless boneless chicken breasts you want in the dish and cover each with a couple slices of button mushrooms and a piece of swiss cheese.
Next, mix a can of cream of mushroom soup with 3/4 cup of milk....pour over chicken in dish.
Then add about 3.4 of a box of Stove Top stuffing on top of that!
Cover the dish with tin foil and bake for about 35 min (for 3 breasts) to 50 min (for 6 breasts).

Here's another while I'm at it:

Chicken Quesadillas Kyle style:

Preheat oven to 375.
In a skillet put a tablespoon of butter and let it melt on Med-High.
Once melted, add chopped chicken (raw or not), bell pepper, and onion. Season with some cumin, salt, garlic powder, and chili powder if you like a little spice. Saute for about 10 min adding a little more oil if needed.
On a baking sheet lined with tin foil place a tortilla or two and fill with sufficient filling from the skillet. Add cheese and place another tortilla on top. I usually brush the tops of the tortillas with some olive oil.
Place quesadillas in the oven for about 12 min or until cheese melts and tortillas are crispy.

Getting hungry all over again.

Old Home Economics recipe.

Mini Pizzas.

Refrigerated tube biscuits (Grands work well)
Pizza Sauce
Mozzarella Cheese (Shredded)

Toppings of choice, I prefer canned black olives, sausage, pepperoni, canned mushrooms.

Heat oven to 350
Roll out biscuits to about 1/4 inch or so, add sauce, cheese, toppings.

Bake about 10-15 minutes until cheese is melted and crust crisps up.


So simple, amazing how many guests I cook these for find them amazing.

We do this with pork chops or pork steaks (cheaper and for this just as good). Cooking for 6 I'll do two pans with 4-5 pork chops (3-4 pork steaks) and a full box of stuffing on each. There is usually a few extra for leftover night (Wed or Thurs)

Another one I just thought of and the one I cooked to win over my wife.

2# Round steak (tenderized) or cube steak
1 cream of mushroom soup
1 can cream of onion soup
3-4 potatos cut into 1/4-1/6

Put round steak in large oven safe pan salt and pepper to taste
Mix soup with Liquid gravy mix until a nice brown
Pour mixture over round steak
add potatos
cover with foil and bake at 350* for 1:15-1:30

If pan is over 3/4 full use a bigger pan.
You can leave out the potatos and serve over noodles, my kids love it if I cover the meat with a couple lasgna noodles. Reduce baking time to 1 hr.

Spaghetti alla Puttanesca

Ingredients:


1 pound dried spaghetti, spaghettini, or linguine fini
5 garlic cloves, forced through a garlic press
3 or 4 anchovies
1/2 teaspoon hot red-pepper flakes
1/3 cup extra-virgin olive oil
1 (28-ounce) can whole tomatoes in juice
1/2 cup pitted Kalamata olives
2 tablespoons drained capers
Pinch of sugar (optional)
3/4 cup coarsely chopped basil


To Prepare:


Cook spaghetti until barely al dente.

While pasta boils, saute garlic, anchovies, crushed red-rpepper flakes, 1 tsp salt, and 1/2 tsp pepper in oil in a heavy skillet over medium-high heat, stirring occasionally, until fragrant and pale golden, about 2 minutes.

Meanwhile, purée tomatoes with juice in a blender.

Add tomato purée to garlic oil along with olives and capers and simmer, stirring occasionally, until pasta is ready. Stir in sugar.

Drain pasta and add to sauce. Simmer, turning pasta with tongs, until pasta is al dente, about 2 minutes.

Add fresh chopped basil.

Edit

Bacon can be added to this dish, and of course, bacon makes everything better :thumbsup:

I have one similar to what CWS posted.

It's quick, easy, cheap, healthy and TASTY!

1 lb lean ground beef or turkey
1 large can Veg-All
1 large can tomato sauce
Seasonings/ spices of your choice.

Brown the meat and add the veggies and tomato sauce and you have a thick and hearty stew. I eat this with a few saltines and a lot of hot sauce.

As the weather cools down I'll make this a lot more often.

Man I got some good one's (in my humble opinion) learned from years of being a bachelor on his own. now i'm not one for measuring i eye ball my recipies so i'll try to do my best on amounts

Beef and corn/veggies

1 lb Ground beef
1 packet taco sesoning
1 small can corn/green beans/ favorite veggie

lightly brown the ground beef, drain the fat, add seasoning and veggies cook till ground beef is done. serve with bread. my go to quick dinner.

another good one

For 2 people

18-20 shrimp (pre cooked)
tri colored spiral pasta
2 oz extra virgin olive oil
2 cloves garlic (minced) or to taste
1/8 cup yellow onion diced
basil to taste
4 roma tomatoes (cut each tomato into 4 pieces)
Lemon

boil the pasta with a little olive oil and salt in the water leave just a bit underdone. pat the shrimp dry and let marinate in a little fresh squezed lemon juice. the in a skillet put olive oil (just enough to coat the pan), garlic and onion over medium heat. when hot add the shrimp cook about 2 min, 1min each side. toss in the pasta add half of the olive oil, toss the shrimp and pasta together. Once that's nice and mixed toss in the tomato, other half of olive oil and basil then mix that around till the tomato is nice and warm.
