Disclaimer: I am in no way a habanos head. I love Tatuaje, Pepin, Dion etc. That said a lot of the flavors discussed I find a little easier in some Habanos cigars.
I guess for me flowers "smell", and I really don't know what a flower tastes like, with the exception of rose (rose water) and maybe honeysuckle (a frequent wine descriptor). But I do think the aroma of a cigar can have a perfuminess, which as you described would be something like floral undertones.
Honey is another wine flavor I cannot pick up in cigars, what have you smoked that has given you honey notes. Just curious.
As for Floral I have experienced it 2x both were in Graycliff cigars which leads me to believe it is something in their blend. The first was a custom roll. I was passing it around the shop and guys were freaking out about how floral it was. Some didnt like it, some like myself loved it. Strangely I experinced the same flavor but to a lesser extent on the 1666 maduro.
Honey I have only tasted on The Por Larranaga PC which was 4 years old. Fresh there is nothing there and I thought a little on the asia regional robusto, but that could have been my head looking for it because of the PC.
I think many CCs do have a sweetness. A prime example being the HDM Du Depute. This stick is very sweet like a fruity charachter. The Du Prince is another. Juan Lopez Pcs as well. I think some may put this sweetness as honey. I can send you a Du depute to try to give you an example of this sweetness.
Much of the CC Sancho Panza line has a saltiness.
