I've had the presnado, black market, and first fine and rare. They all had that minerality that OP is talking about. It's almost like chinese five spice, mushroom, and nutmeg. As to why some get these flavors.... no idea. I do like the black markets.

smoked a prensado from a pif shortly after CA awarded the award on these .
loved it (excellent flavors) and shocked being it wasnt all that far from its heraldings .
