Yup. Strange in that even though it is bird, the meat is red like beef. I've enjoyed it.

Yup, it actually tastes more like meat than like bird....very low in fat as well...Me likee!!:yes:

Yes, ostrich is very lean, yet very tasty (not as much as beef, but pretty close), and is extremely tender. Almost as dark red as beef. Tastes like a mixture of beef and chicken. I'm sure those who havent tried it will like it if they like poultry and beef. Unfortunately, ostrich is difficult to find. But my butcher can order it, so I get it from time to time...

Howdy,
Alligator is pretty good....I expect it would work fine in Jambalaya or gumbo and as noted....it is good cut up in "nuggets", battered in a well seasoned batter and fried.....it, however, does not really taste like chicken.
Now as for rattlesnake, the best way to prepare one for frying is to cut the meat from the bones, much like removing the loin from a deer...that way there are no bones. Cut into pieces, it can be added to jambalaya, gumbo, soup, or battered and fried. It, too, does not taste like chicken.
Good luck, and don't be afraid to try new ways of cooking 'gator and other such critters.
