FYI, I'm an accomplished chef, also. I have ways to bbq ....roast...fry...saute... grill...or ..otherwise... burn flesh...that will make your mouth water and your nostrils flair...

Meat tip: from the Kojakster....

goto Costco or Sams and buy a whole ribeye roll or filet, or even a NY strip.... still in the cryovac... be sure it is not leaking and is sealed entirely.

Take it home...find a spot in your fridge...NOT your freezer...and mark the date 21 days from the day you bought it....leave it on a shelf IN the cryovac for 21 days...yeah..i know...but trust me...it will be AWESOME!!

After 21 days...cut and trim the beef to your satisfaction...I then season mine with a mixture of coarse sea salt, malabar pepper and coarse dried roasted garlic...I have a commercial foodsaver that I put two or three steaks in each pack and seal....

OHH...the beef at Costco is "Choice" ..when you get done doing this..you will have as close to PRIME beef as you can get...the flavor and tenderness of the meat will be 3 times what it would have been if you just cut it and cooked when you bought it

Enjoy~
