As some of you may know, Im a Chef at the Omni ChampionsGate here in Central Florida. For the last year, I have been the Kitchen Supervisor for our 3 meal restaurant, Trevi's, in charge of the breakfast and lunch shifts. I have to report to work at 5:30am, leaving my house at 4:45ish to make it on time... So yesterday I was informed that they had let go of the Chef for our Upscale sports bar named, "David's Club" (no relation)... So restructuring the department, they are making me 2nd in charge of this semi-fine dining steak house. I will be working under one of my mentors and very good friend Chef Edward Springfield, who co-owned "Estillo" a Mediteranean bistro in Ohio. I feel really blessed as I was losing my touch and culinary creativity working a boring, yet extremely busy breakfast shift and a producing a "Chili's" style lunch menu. I have been wasting my talent, and I believe that I can make a difference at this restuarant. Chef Eddie expressed to me that his goal is to have me ready to take over as head Chef in less than 6 months...

If this happens, I will be known as Chef David, Head Chef of David's Club.

Isnt it Ironic??? dont you think!?

So if you find yourself near Davenport, give me a holla, I'll hook you up with a nice Flamed broiled NY Strip or a more delicate pan seared grouper.
