Quality of material, attention to detail, one man taking the time to read the block of Briar and use the right piece for the right pipe and work it by hand from start to finish. But yes, the finish will usually be of higher quality as well if the artist is skilled in his trade.
Kinda like how a Honda will take you to work just fine, but some people prefer a BMW. Let's not even get into the Maserati... no thousand dollar pipes in this guy's stable!
