Nice. I bought a box of Sharks in September and liked them but thought the 3 ish I smoked were a little rough ROTT--looking forward to seeing what 6 months plus does to them.

The first half of the final 3rd got a little bitter but tapered out within a 1/2". I'm going to smoke a handful now, then maybe one a month until they start peaking. Then it's on.
