12.5 turkey dry brined and injected at the 3.5 hour mark.
Been at Lake Barkley in Eddyville, Ky for the week. Family did some fishing. Mostly jugging for catfish. Also caught a few blue gill. Good ole fashion Friday night fish fry.
One evenings catch.

Made some scotch eggs tonight. No pics but they were delicious, and they'll be even better for breakfast tomorrow.
I don't know what you use, but if you like jerk you have room try this!

Gonna make a Jamaican jerk chicken pizza with mango-pineapple relish.
Made my jerk marinade last night along with a killer Jamaican BBQ sauce that will serve as the base sauce. Smoking the chicken; topping the pizza with fontina and smoked provolone and the mango relish.

Really looking forward to this new concoction.

Here's my pizza. To me it was just "meh"
Too sweet for my liking. I love love love jerk chicken and now I've come to realize there is no reason to eat it any other way than just smoked.
