I love southern BBQ, yet it still applies to me statement: America's got little cuisine to call it's own. Not that it is bad, only that the variety's a tad too few.

My point is that BBQ isn't "fast" food--on the contrary, it's very, very, very SLOW food! :rofl:

Southern-style BBQ typically means you're cooking over indirect heat--and it's a slow process. Hell, my buddies and I typically cook a pork shoulder for over 24 hours. LOL That's not "fast" at all.
