there were 6 of us, me, XDDCO, Podman, keinreis, the shop owner, and the tat rep and we finished the 3 racks and a nice big salad and some red beans and rice all while smoking tat blacks. :cbig:

Went to Outback Steakhouse with my brother (as he is in town for Spring Break) tonight, and it was a big mistake. That was easily the worst steak I have ever eaten... and overpriced. Went home and opened a bottle of port (feel like I just did that the other night), and finished the night right.

2 corned beef briskets(flat cuts) baked in Guinness for 2 hrs 30 mins on 325. Slightly cooled then sliced thin. Placed on buttered marble rye and placed open faced on flat griddle pan. Both sides get swiss placed. One side place brisket over cheese. Other side place drained sauerkraut and Thousand Island mixture. Let open faced pieces toast for several mins then combine. Few mins on each side again with the occasional press down on the "samich" is all ya need. Extra Guinness doesn't hurt to quench ones thirst.
They didn't suck.

Wow, that sounds A-MAZING!

I have to thank RyJ Smoker once again for his Riesling mushroom and zucchini post. My wife is a vegetarian, so it's tough sometimes to cook for both of us. I picked up a couple of packages of mixed mushrooms from the grocery store the other day. Threw them in with some garlic and olive oil to saute, hit it with some Riesling and butter to create a sauce and it was AWESOME. Also sauteed a couple of Pork Chops with garlic, seasoned with kosher salt and grill seasoning, hit that with Chardonnay and butter to create a sauce and voila. Both came out very, very tasty. Served up with a boxed pasta mix and frozen vegetable mixture. Yeah, I know, sounds really appetizing, but that's pretty much how we roll in my house, lol. Next time the idea is to boil up some plain pasta and make more sauce.

Made some corned beef with colcannon, carrots, Irish soda bread, and Guinness chocolate cake. The recipe on the cake said to make it look like the head on a pint of Guinness.

Nice, Justin! Matt and I were in Lake Geneva all day/night, rockin' Guinness' at Champs all afternoon, then went to Chuck's Pub for some corned beef & cabbage :) FUN day/night!

Tonight was lemon pepper chicken on spinach with a little white wine sauce.
