Interesting question. I really like Nickel Creek's cover of... well pretty much everything. Mother Mother's "Hayloft", Bob Dylan's "Tomorrow is a Long Time", Pavement's "Spit on a Stranger", Sister Hazel's "Starfish"... one of my favorites is Wilco's "I Am Trying To Break Your Heart"

Cornell does a "change the meaning" version of Michael Jackson's "Billie Jean", some awesome U2, Zep and many other covers. His voice is amazing.

FWIW, the Metallica version of "Turn the Page" is my most hated remake. They killed an awesome Seger tune, and not in a good way.

Probably not something you guys listen to judging by some of the answers, but Amy Winehouse - To Know Him Is to Love Him is amazing.
This may require me to turn in my man card, but her cover of the Zutons "Valerie" is awesome and her version of "Will You Still Love Me Tomorrow" is the best I've ever heard.

And the most favorites of mine are about half of Led Zeppelin's catalogue,
that are remakes of old blues songs, and love every one of them.
