I'm a big fan of Pop-Punk and Post-Hardcore, so I like a lot of the "Punk Goes..." Series. There's too many to list, but recently a soldier of mine let me borrow Punk Goes 90s Vol. 2 and I like the "Gangsta's Paradise" cover, but that whole album is pretty damn good.
You may like this one if you have not already heard it.

It's funny a lot of people think it was the opposite
Remember the NIN cover of "Dead Souls" for the Crow soundtrack? When my bandmate heard the Joy Division recording he thought it was another Johnny Cash cover of NIN rather than the original recording NIN covered...

We kicked him out shortly after that. He was kinda a moron.

Johnny Cash's cover of Hurt by Nine in Nails

I have quite a few favorite covers including the Devo cover that XD mentioned in the first post but Johnny Cash's cover of Hurt is by far my favorite.

Jimi Hendrix version of Bob Dylan's All Along the Watchtower is a close second.

I love all of the Grateful Dead's covers, but aside from that,

One of my favorites is Iron Maiden's cover of Jethro Tull's, "Cross Eyed Mary".

Devo's Satisfaction is brilliant (and great avatar, by the way!). I like the Dickies' covers of Sound of Silence and Nights in White Satin. This one's more obscure, but nicely demented:

Hendrix's Watch tower is great huh?
I may not have the story down exactly, but I think Hendrix heard a demo of Dylan's Watchtower. Recorded his cover of it before Dylan released his. Dylan liked Hendrix version so much that he altered his to sound like Hendrix's. Or something along those lines. Pretty cool huh?
Also, the Grateful Dead did a great Watchtower too. They did a ton of Dylan. They did a tour together in 1987. I went to several of the shows. ;)

Awesome video for the Cash version of Hurt also. He passed away about 7 months later. The video almost tears me up a lil bit when I watch it.
