I am going with

I also decided to go with the plywood for the walls and ceiling and the 3/4" plywood shelving, crown molding, baseboards, etc from this company. As an estimate for a 6x6x9 room with everything to complete it wood wise, the total shipped is approx. $2200. Another place I researched,
www.woodvendors.com for Spanish cedar but in the tongue and groove format and is 1x4 was about $2100 shipped. That included them milling to my specs and would have covered the walls and ceiling. Baseboards, etc. would be extra. After doing an exhaustive research online and locally these were the 2 best companies for those formats. I should point out that the cedar really isn't needed on the walls and ceiling, the shelving is perfectly fine and if singles are being stored in cedar trays that helps also. I was on the fence about whether to even do the walls and ceiling, but decided to go forward with it and go all out. I could build the walk-in for substantially less and be just as effective without the cedar.
I went with the Accumonitor for controlling humidity and will be using a Ciezo humidifier, again a little overkill on the humidifier, but I like the auto-fill feature on it. I am lucky in that the room I am using shares the same wall as the bath sink, so I will be installing a under sink RO system that will plumb directly into the humidifier so I won't have to buy distilled water. Again a little overkill, but once I decided to cedar the walls, etc I figured I might as well go all the way with it.
I have just started working on mine, so it will be a few weeks before it is complete. I am waiting on the wood company to get more 3/4" Spanish cedar wood to make the shelves as they just delivered a big order and are out currently. So there is a 2-3 week delay in that, otherwise everything else is ordered or arrived already. Jason(Funkejj) can provide some answers as he has helped me a ton already as well as RonC if you decide to go with Accumonitor. I inquired to another company that makes the set and forget it as they also sell a auto-fill humidifier, however they only wanted to sell me the humidifier and their humidity control system together, so I chose not to go with them for that.
