co-roasted Mexico and Panama to city +
very smooth body,light citrus,sweet earth,barley and caramel.
tried a second batch with 20 % Sumatra roasted way dark .........
pretty good,some smoke and espresso going on......
Vendors keep sending me sale emails,I have enough coffee now to last 8 to 10 months.....
Oh Look! a sale ........gotta go....

Bro. What are you using to roast. Those beans look amazing. I looked into sweet Maria's after reading @wickets recommendations but not sure if it's a slippery slope I want to descend.

Popcorn popper bro easy process. You can do a light girl roast and up to a dark strong man roast. It gets messy.... But it's so worth it. Just grab a cheap red popcorn machine from target and try it bro.

No way man! Light roast is where it's at! You actually taste the coffee and not just the roast. Light roast also has more caffeine. Zoom zoom!!!!

For real though, the biggest advantages to roasting your own are that its always fresh and you can roast it exactly to your personal tastes. It also helps that green coffee is usually way cheaper than buying it roasted commercially.

If you want dark roast ditch everything and get a $5 Mr. Coffee. All nuance of the bean/region is lost in dark roasting.

I use a stove top whirley popper after burning up a few air poppers. It's more manual as you have to sit and crank it for 10 mins or so but I can roast a pound at a time if I want. As soon as it hits first crack I kill the heat and dump into a pan to cool.

Ugh. Just bought a kit frowm sweet marias. Whirley popper and 8 lbs green coffee for 50 shipped. Can't buy 8 lbs of good coffee cheaper.

How long will green coffee last on the shelf?

Just leave them in the bags they will stay fresh long enough for you to roast. And don't worry about over roasting or under roasting. Eventually you will get the roast you like.

You might enjoy a light girly roast like @dscl

Or maybe you will enjoy a dark manly roast.

Without getting to sciency Wikipedia makes some general statements…
Light roasts - Moderate light brown, but still mottled in appearance. A preferred roast for some specialty roasters, highlights origin characteristics as well as complex acidity.
Dark roasts - Bittersweet flavors are prominent, aromas and flavors of roast become clearly evident. Little, if any, origin character remains.
